It's usually on the last stage called Rapid eye movement sleep, or REM sleep, where most complex and memorable dreaming occurs. The brain activity during the last phase of dreams presents similar conditions to an awake person with eyes open.
When we dream, our moving eyes try to send information to our brains, and since there is no logical data collected by our closed eyes, our mind tries to avoid a stopping, and interpret these signals in a very particular way. So the things we see, say and live within our dreams, are the result of our minds taking all kinds of data, generally from our immediate memory, and trying to re-order and organize this information in a coherent way.
